Menu Plan Monday - September 26, 2022

I am back in meal planning mode as I took a little time off. M was gone on trips over the last few weeks, so I just took the really lazy approach in the meal planning department since it was just me. Some nights I would make a mini charcuterie board, some nights a smoothie or sandwich and other nights I would have a simple salad. Now that there are two of us back at home each night this week, I have put together another meal plan. Monday - Beef fajitas with peppers, onions and guacamole. Tuesday  - Leftovers Wednesday  - Hamburger steak and green beans Thursday  - Spaghetti with a side salad Friday  - Hamburgers Saturday  - Dinner Out Sunday  - Steak and vegetable kabobs What is on your menu this week?

Menu Plan Monday - September 5, 2022

Happy Labor Day! We have a bit of a crazy week with my husbands upcoming work schedule and trip, so it's a menu full of easy foods this week.  Monday   Grilled steak with baked potatoes and left over cream style corn.  Tuesday   Crockpot Chicken with Creamy Cajun Sauce and green beans Wednesday Crockpot Cube Steak with a side salad Thursday  Leftovers Friday  Tacos Saturday Spaghetti Squash with Homemade Marinara  Sunday Taco Salad  What is on your menu this week? Menu Plan Monday - August 22, 2022

I have shifted a few of the meals from last week to this week due to our unplanned events last week. The horse accident needed an evening trip to the vet, so we had 10 pm pizza one night. Another evening, my wonderful mother in law brought us dinner. We ate really well last week and I did not mind altering the meal plan. Here's what I am planning to make for dinner this week Monday   Grilled steak with a garden salad Tuesday   Salsa Verde Shredded Pork on Tortillas Wednesday Leftovers Thursday  Chili  Friday  Enchiladas Saturday Spaghetti Squash with Homemade Marinara  Saturday Shrimp Scampi. H-E-B sells premade cooking sauces and a friend was raving about the scampi sauce. I picked some up this week for an easy meal. 

Menu Plan Monday - August 15, 2022

It's Monday, so that means it's time for another weekly meal plan. My husband did a little shopping over the weekend so we already have meat thawed for some of our meals.  I have a grocery pick up planned for today with salad ingredients and a few other items to round out our menu plan. The fresh ingredients will be used in meals at the beginning of the week and I'm still pulling things from the freezer for the end of the week.  Monday - Beef fajitas with all the fixings Tuesday - Grilled NY Strip steaks with salad Wednesday - Easy Greek Salad Thursday - Slow Cooker Salsa Verde Pulled Pork Friday - Instant Pot Sausage Peppers & Onions Saturday - Dinner Out Sunday - Grilled steaks with green beans and Caesar salad What is on your menu plan for the week?

It's Monday and I'm sharing my meal plan this week. This week took a little more effort as I have been procrastinating using things out of my freezer. Inspiration does not come easily when I do not a Pinterest worthy recipe photo to inspire me! How many of you can relate? So, here are a few ideas I have put together using the ingredients I have in the house. What are you having this week at your house? Monday - Beef fajitas with bell peppers and onions on keto friendly tortillas. Tuesday - Oven baked catfish and sautéed shrimp with a side salad Wednesday - Grilled pork chops with bacon and cheddar mashed cauliflower  Thursday - Grilled chicken salad with ranch dressing Friday - Grilled steaks with a side salad Saturday - Out to eat Sunday - Spaghetti Squash with Rao's marinara 

Menu Plan Monday - July 18, 2022

Hey y'all, Happy Monday!! It was a little bit of a stressful weekend. I stayed at home while my husband had to take his dad to the hospital due to come cardiac problems. They were both gone all weekend, but arrived back at home late Sunday night after a quick treatment for dad! All is well now and everyone is back home!  I stayed at home to take care of the dog and horses and was able to catch up on a lot of neglected things around the house. I organized the pantry, cleaned out the refrigerator and did a closet clean out. I was able to list some clothes and shoes that I no longer wear on Ebay, so hopefully those will sell soon. I took a few items to the donation bin in town as well.  Since I cleaned out the pantry and refrigerator I have a grocery order placed today. Here's what we plan on eating this week: Monday - Hamburger patties with onions and mushrooms.
